Explanation #
The plate cost is the number most operators fixate on, and it’s the least useful number for pricing decisions on its own. [The X Factor] names everything else that has to ride on top of that plate cost before a menu price actually covers what the dish costs to deliver — every fixed and variable expense the operation carries whether or not that specific plate goes out the door.
The practical use is a pricing discipline: a menu item that looks profitable against plate cost alone can still be a loser once [The X Factor] is applied, because plate cost was never the whole cost of getting the dish to the table.
