These are real segments of people who would genuinely prefer to dine during off-peak times — if you gave them a reason. Not a discount. A reason. A menu designed for their timing. An experience tailored to their occasion. Something worth showing up for.
Larger gatherings during slow periods — private parties, business meetings, team celebrations. Cooking classes. Wine pairing events. These generate revenue and serve as marketing at the same time. The Guest who attends a pairing event on a Wednesday night is not a deal-seeker. They came because of what you built. And they tell people about it.
