# Food Compounding

### Definition

Sub-child of [P&L Compounding], mirroring [Food Arbitrage]. Menu-mix loyalty, signature-dish anchoring, and repeat-Guest mix that compounds food margin over time without chasing per-cover spread.

### Explanation

[Food Arbitrage] captures margin by engineering the plate math -- portion size, price point, the number that reads as value against the comp set. [Food Compounding] is the relational mirror: instead of engineering a single transaction to look like value, the operator builds a menu the Guest comes back to on its own gravity. The signature dish becomes a reason to return; the mix becomes something Guests recommend rather than something they merely order once.

The margin difference shows up over time, not on a single check. Arbitrage margin decays as inputs shift or a competitor out-engineers the math. Compounding margin builds as repeat-Guest frequency rises and the menu's signature items do more of the selling than any one price point ever could.
